Twice Baked Goats Cheese Souffle 
Drizzled with herb oil and garnished with long chives 

Asparagus with Hollandaise  
Oven baked asparagus served with a shot glass of hollandaise
 
Warm Tomato Tart Tatin
Glazed puff pastry tartlet topped with cured tomatoes, red onion marmalade with a rocket and marinated olive salad
 
Cream of Leek Soup
With a swirl of cream and chopped chives
 
Salmon Fishcakes
Pan fried with a herb crust on a baby leaf salad and served with a shot glass of caperberry mayonnaise

Beef en Croute
Seared fillet of English beef rolled in horseradish cream, served on a confit of mushrooms and topped with a puff pastry lid with fondant roasted potato and drizzled with a redcurrant and red wine jus
 
Aubergine Summer Tower
Layered grilled aubergine, mozzarella and tomato topped with basil leaves and baked vine tomatoes, drizzled with balsamic dressing
 
Guinea Fowl
Served on crushed new potatoes with spring cabbage, and spring onions, drizzled with a Marsala jus and served with honey caramelised banana shallots
 
Slow Roasted Belly of Pork
With shards of crispy crackling and served with a green cabbage mash with a cider, apple and thyme jus
 
Baked Butternut Squash
Filled with butterbeans, spinach and squash on sage risotto with herb oil
